Grammy's Soft Lemon Cookies

Ingredients

  • 3 eggs
  • 1/4 cup of vegetable oil
  • 3 teaspoons of baking powder
  • 2 cups of flour + a little more
  • 1 cup of sugar
  • The juice and zest of 1-2 lemons
  • 1/2 cup of powdered sugar

Instructions

  1. Preheat the oven to 350ºF. Prepare a pan with parchment paper.
  2. In a large bowl, add the sugar and lemon zest. Mix together with your hands until the sugar has the same texture as wet sand.
  3. Add the eggs, vegetable oil, baking powder, and lemon juice. Beat with a wooden spoon until smooth and light.
  4. While still beating the mixture, add the flour 1/2 a cup at a time. Be careful not to over-mix by mixing until the flour is just incorporated. The dough should be wet, but you should still be able to form a ball with the dough in your hands. If the dough is too wet, add a few more tablespoons of flour.
  5. Roll a 1-inch ball of dough with your hands and coat it in the powdered sugar. Put onto the prepared baking sheet, spacing the cookies about 2 inches apart.
  6. Bake in the oven for about 8 minutes, until the bottom of the cookie is light brown.
