Grammy's Soft Lemon Cookies
Ingredients
- 3 eggs
- 1/4 cup of vegetable oil
- 3 teaspoons of baking powder
- 2 cups of flour + a little more
- 1 cup of sugar
- The juice and zest of 1-2 lemons
- 1/2 cup of powdered sugar
Instructions
- Preheat the oven to 350ºF. Prepare a pan with parchment paper.
- In a large bowl, add the sugar and lemon zest. Mix together with your hands until the sugar has the same texture as wet sand.
- Add the eggs, vegetable oil, baking powder, and lemon juice. Beat with a wooden spoon until smooth and light.
- While still beating the mixture, add the flour 1/2 a cup at a time. Be careful not to over-mix by mixing until the flour is just incorporated. The dough should be wet, but you should still be able to form a ball with the dough in your hands. If the dough is too wet, add a few more tablespoons of flour.
- Roll a 1-inch ball of dough with your hands and coat it in the powdered sugar. Put onto the prepared baking sheet, spacing the cookies about 2 inches apart.
- Bake in the oven for about 8 minutes, until the bottom of the cookie is light brown.
