Sicilian Orange Cake
Ingredients
- 2 cups of flour
- The juice and zest of 3 oranges
- 1 and 1/2 tablespoons of baking powder
- 1 and 1/2 cups of sugar
- 1/2 cup of olive oil (I prefer one with a light taste)
- 3 eggs
Instructions
- Preheat the oven to 350ºF.
- In a large bowl, add the sugar and orange zest. Mix together with your hands until the sugar has the same texture as wet sand.
- Add the eggs and vegetable oil. Beat with wooden spoon until very light in color, about 3 minutes. Then, add the orange juice.
- In a separate bowl, mix the baking powder and flour together. Then, add the flour mixture 1/2 a cup at a time. Be careful not to over-mix by mixing until the flour mixture is just incorporated.
- Pour the mixture into a greased and floured bundt or tube pan. Bake in the oven for about 40-45 minutes, until a toothpick inserted into the center comes out clean. Let cool in the pan for at least 15 minutes before removing.
