Sicilian Orange Cake

Ingredients

  • 2 cups of flour
  • The juice and zest of 3 oranges
  • 1 and 1/2 tablespoons of baking powder
  • 1 and 1/2 cups of sugar
  • 1/2 cup of olive oil (I prefer one with a light taste)
  • 3 eggs

Instructions

  1. Preheat the oven to 350ºF.
  2. In a large bowl, add the sugar and orange zest. Mix together with your hands until the sugar has the same texture as wet sand.
  3. Add the eggs and vegetable oil. Beat with wooden spoon until very light in color, about 3 minutes. Then, add the orange juice.
  4. In a separate bowl, mix the baking powder and flour together. Then, add the flour mixture 1/2 a cup at a time. Be careful not to over-mix by mixing until the flour mixture is just incorporated.
  5. Pour the mixture into a greased and floured bundt or tube pan. Bake in the oven for about 40-45 minutes, until a toothpick inserted into the center comes out clean. Let cool in the pan for at least 15 minutes before removing.
